Recipes

Orange Salad
1 Lg package (or 2 3-oz packages) Orange Jello
2 C boiling water
Dissolve jello in boiling water
1 Pt Orange SherbertStir in sherbert
Refrigerate 1 hour
1 Pt Whipping CreamWhip cream.
Lg can of Mandarin Oranges, drainedFold oranges and whipped cream into jello. (My family isn't sure how much you are supposed to stir this and if there are supposed to be swirls in the result, but we prefer it well mixed, so we stir.

Ganache Sauce for Ice Cream
Ganache used for truffle filling is half chocolate and half cream. It also makes a great cake frosting. To make a sauce out of it we'll increase the amount of cream and add some milk. I got the original recipe from Sauces by James Peterson
1 Lb bittersweet chocolateCut into pieces. (Recipe says medium, I prefer small, because I like the sound my knife makes when I cut it up).
1 C Heavy cream
1 1/2 C Milk
(The extra half a cup of milk listed is for ice cream which makes the ganache sauce very thick; use 1C milk if making for other sauce uses). Scald the milk. (Heat over medium, stirring, until little bubbles for all around the edge. Add to the chocolate in a large container (this makes a quart). Let the heat of the cream./milk melt the chocolate then stir until completely smooth. Be sure to get the bottom of the container. (If I'm making normal ganache the scalded milk doesn't quite melt the chocolate so I give it 10 second burst in the microwave on lowest power, stirring between. For the sauce the increased amount of milk seems to assure melting. But stir well.)
2 oz butterAdd to the milk/chocolate to impart an appealing sheen. (The recipe doesn't say anything about unsalted butter, and chocolate goes well with a pinch of salt to bring out full flavor, so I use regular salted butter).
1 tsp vanilla extractStir in. (Not part of the recipe I read, but I like vanilla.
BBQ Ribs and Chicken Recipe
- 3 racks of Baby back ribs
- Approx. 3 Lbs of Chicken thighs
- 4 bottles of Tony Roma's Blue Ridge Smokey BBQ Sauce
Fire-up the grill, Charcoal preferred.
Make a large, hot fire. Grill the Ribs till nicely browned (not fully cooked); remove and reserve in a baking dish or foil pan.
Grill the chicken till nicely browned (not fully cooked); remove and reserve in a separate baking dish or foil pan.
Pour two bottles of BBQ sauce over the dishes to coat the food. Cover tightly with foil and bake in a 275 oven for two hours.
Now cut a slit (approx. 2 inches) in the top of the foil and return the pans to the oven and continue to bake for another hour.
Remove the pans and check the meat...it should be very tender and come away from the bone easily. If it doesn't, bake for a while longer.
