Professional CookingWayne GisslenA book used by people studying to be a chef, I think thy use it at CIA (Culinary Institute of America). On the down side that means the recipes are a bit hard and terse and they tend to make more than you want. But it has a lot of very good materials on the basics.
The Chef's ArtWayne GisslenBy the same author as above this is intended for more home use. It's a good reference (in my opinion) but the recipes still tend to make more than I want.
